Honey Mustard Salmon & Salad

As the weather in Adelaide is starting to cool down the team at Minerds Bell have been looking for something delicious yet healthy to keep our tummies full and to keep us warm. We're making the most of what sunny weather we have left with this delicious salmon!

Honey Mustard Salmon & Apple Salad  (Serves 4)

For the Salmon
4 Salmon fillets (skin off)
1tsp Wholegrain mustard
4 tblsp Honey
Olive Oil
Salt & Pepper

For the Salad
1 Granny Smith apple
1 Cos lettuce
1/4 cup Shaved parmesan
1/4 cup Almonds (you can crush whole ones or use slithers)

Preheat the oven to 200C. Place the salmon on a lined baking try (lining means no dishes). Mix the mustard, honey and a splash of olive oil together. Pour the honey mustard glaze over the salmon and place in the oven. Bake for 10 mins, basting half way or until fish is tender.

Whilst the fish is in the oven wash and shred the lettuce, slice the apple, and place in a bowl with the parmesan and salmons. Season with salt and pepper, drizzle with a little olive oil and toss.

Once the fish is cooked place it all on a plate and you're done!
